Youtiao has a long Chinese history; an exact invention date is harder to prove
Food histories are often transmitted through names, regional practice, cookbooks and oral stories rather than one invention record. The safe account is therefore layered: the food has a long history in China; it developed regional names and serving practices; and one especially famous origin story became attached to its paired shape.
The Yue Fei and Qin Hui story is a popular legend
A widely repeated story places the origin in the Southern Song dynasty after the death of the general Yue Fei. In the story, people angry with the official Qin Hui and his wife shaped two joined pieces of dough to represent the couple and fried them. The Cantonese expression often rendered yau ja gwai—“oil-fried devil”—is commonly connected with this narrative.
China.org.cn presents this account as the story associated with the breakfast food. It is culturally important because it explains the paired form and names used in some regions. It should still be labelled folklore or popular legend, not archaeological proof of the first youtiao. Marketing copy that says “invented in an exact year” overstates the evidence.
Why youtiao became a breakfast food
Fresh frying creates the contrast that defines the product: crisp outside, open and tender inside. That quality is strongest soon after production, which fits morning street stalls, markets, bakeries and soy-milk shops. Its neutral-to-savoury flavour also works with breakfast liquids and staples rather than competing with them.
Across Chinese food traditions, common pairings include soy milk and congee. Other combinations place youtiao inside shaobing, wrap it in a rice noodle roll, or enclose it in glutinous rice. These are not decorative serving ideas; they affect the commercial product. A youtiao made for dipping may be long and airy, while one made for wrapping may need different dimensions, crispness retention and breakage resistance.
The product is moving from skilled craft toward controlled production
Traditional preparation requires judgement at mixing, resting, cutting, pairing, stretching and frying. The 2022 Food Chemistry study describes the traditional process as complicated and dependent on professional workers, then examines frozen dough as one route toward centralised production and consistent local frying. The 2024 Cereal Chemistry review likewise frames youtiao quality as the result of ingredients and processing together while production scales toward industrial levels.
Industrialisation does not make every youtiao identical. It creates tools for controlling dough blocks, forming geometry, throughput and downstream handling while preserving a market-specific eating target. Regional identity therefore belongs in the product brief: the factory should record the local name, reference sample, serving occasion and expected cross-section before choosing equipment.
