A capacity figure can describe raw dough, formed pieces, first-fried product, re-fried product or accepted packed output. It can be expressed as kg/h, pieces/h or batches/shift. Those values are not interchangeable without piece weight, yield and operating-time assumptions.
Build demand from accepted product

Use ranges and sensitivity checks until trials establish actual yield and uptime. Do not hide uncertain assumptions inside one precise-looking result.
The qualified bottleneck sets line output
Compare the sustainable rate of mixing, tray preparation, conditioned-dough release, forming, fryer loading, cooling and packing. Also check whether each step can maintain the accepted quality window. A fast former does not increase sellable output if the resting system starves it or the fryer cannot control loading.

Work-in-process between batch and continuous steps absorbs normal variation. For rested dough, too much buffer may also change temperature, relaxation or leavening state. Define minimum and maximum dwell time, first-in/first-out control and the action when downstream production stops.
Write a capacity acceptance protocol
- Name raw materials, formula and target product.
- Define warm-up, continuous run time and permitted planned stops.
- Measure both pieces/h and kg/h at named process states.
- Record yield, rejects and rework separately.
- Confirm quality throughout the run, not only at the first sample.
