Cutting specification

Specify the cut, not just a “meat cutting machine”

A slice, a strip, a dice and a shred are different acceptance targets. Give the supplier a drawing or a retained sample before comparing machines.

Shape and dimensions

For slices, specify thickness; for strips, thickness, width and desired length; for dice, all three dimensions. For shreds, describe the required fibre appearance and acceptable length variation. State tolerances and the proportion of undersize pieces you will accept.

Condition at the inlet

Record whether the sample is raw or cooked, its measured temperature, incoming dimensions and fat or connective-tissue content. Do not treat “frozen-tempered” as equivalent to an untempered frozen block. Ask the supplier to confirm the permitted feed condition for the proposed model.

A comparable demonstration

Request an inlet sample, the cutting configuration and a representative output sample from the same run. A cooked-meat demonstration alone does not establish performance on your raw material. Record accepted output separately from offcuts and rejects.

Technical reference: Urschel's meat-cutting application notes distinguish dice, strip and shred applications and make capacity conditional on material and feeding. Is published machine throughput the same as complete-line output?

No. Complete-line output is limited by the slowest repeatable operation plus changeover, sanitation, thermal cycles, rejects and buffers. Acceptance should use saleable product over an agreed operating window.
