Start with the job the wash stage must perform
“Clean vegetables” is not a complete specification. Separate the incoming condition, the visible-quality target and the food-safety control plan before choosing equipment.
Match wash action to product sensitivity
The correct question is not which action sounds strongest; it is which combination removes the target material while protecting the saleable product.
What a commercial vegetable washer can—and cannot—establish
Community questions frequently combine visible cleaning, chemical residues and microbiological safety. Keep these outcomes separate.

FDA's August 2026 fresh-cut produce guidance explains that uncontrolled wash systems can spread pathogens through shared water. It also explains that an antimicrobial wash-water control is primarily used to limit transfer through the water and is not automatically a pathogen kill step on produce. The facility must determine the applicable regulatory framework and validate its process.
Treat wash water as a process stream
Recirculation saves neither water nor risk automatically. Define how contamination enters, accumulates, is removed, is monitored and finally leaves the system.

- Incoming soil and foreign-material description with photos or a representative sample.
- Target output in saleable product per hour and expected operating hours.
- Maximum acceptable bruising, breakage, leaf loss or surface damage.
- Available water source, temperature range, recirculation intent and wastewater route.
- Upstream feeding method and downstream inspection, cutting, dewatering, freezing or packing step.
- Applicable market, food-safety plan, sanitation method and validation responsibility.
