Use the small batch to answer a production question

Decide whether the trial is intended to improve wrapper consistency, establish a mixing structure, or develop a new noodle recipe. Record the current result so the comparison has a clear starting point.

  • Identify the fitted bar or plate arrangement and photograph the resulting dough condition.
  • Record dry flour, added water, total dough mass and discharge temperature for every batch.
  • Time loading, mixing and discharge separately, and record waiting before the receiving machine can accept the next batch.
  • Carry samples through the intended resting, rolling, forming and cooking route.

The listed six-minute mixing time is one part of that record. It does not establish hourly output or prove that resting can be removed. Build the pilot-trial brief.

40 L laboratory and pilot-scale selection

The 40 L vacuum horizontal mixer is suited to recipe development, pilot production and smaller commercial batches, but bowl volume is not the same as usable dough capacity. Flour absorption, total recipe mass, dough density and the required headspace under vacuum determine the working batch. Tests should cover both the minimum batch that mixes uniformly and the maximum batch that stays within drive and discharge limits.

A pilot mixer is most valuable when its process can be transferred to larger equipment. Record ingredient order, liquid temperature, vacuum timing, paddle speed, mixing energy or time, final dough temperature and rest period. Geometric and drive differences mean scale-up should be verified rather than based only on a linear volume ratio.
