Vacuum dough mixer trial & selection worksheet

Collect the minimum information needed to compare an atmospheric baseline, define a safe vacuum trial, size the complete batch cycle and judge the resulting noodle or wrapper—not just the mixer.

Pressure boundary: the published −0.08 MPa value is machine capability, not the required setting for every dough. Record gauge versus absolute pressure and establish the operating window through the actual product.

Compare the dough and finished product on the same basis

Start with your current recipe and an accepted product sample. Record each mixing arrangement under comparable flour, water and temperature conditions. Explain whether the target is a crumb-like discharge, a cohesive dough mass, a firmer bite or a softer crumb.

List added water per 100 kg flour separately from total mixed-dough mass. Record the full batch cycle and downstream waiting, then compare accepted output and staffing. Extra added water alone does not prove extra saleable yield or a shorter payback period.
