Khinkali production

Design for a large pleated pouch that must retain liquid and shape.

Khinkali creates a demanding interface between wrapper strength, moist filling, pleat closure and top-knot geometry. A dedicated sample trial is essential before a forming system or output commitment is finalized.

Khinkali needs its own validation—not a dumpling assumption.

Critical inputs

  • Finished base diameter, height, knot size and piece weight
  • Pleat number or acceptable visual range
  • Dough thickness profile and stretch requirement
  • Filling particle size, broth/free-liquid condition and temperature
  • Boiling, chilled or frozen state at the next process

Critical outputs

  • Liquid retention before and after cooking
  • Closure strength without excessive dough mass at the knot
  • Filling and total-weight consistency
  • Upright transfer and spacing without pouch deformation
  • Accepted output after leaks, malformed pieces and start-up loss
