Start with the dumpling specification
A dependable frozen dumpling line is designed backwards from the finished product. The engineering input must define dumpling shape and weight, wrapper thickness and hydration, filling formulation and particle size, dough-to-filling ratio, seal geometry, freezing target and retail or food-service pack format. Those decisions determine each machine, conveyor interface and hygiene zone.
HELPER’s published project scope covers Chinese jiaozi, potstickers, shumai and wonton; Japanese gyoza; Polish pierogi; Russian pelmeni; Indian momo; Turkish manti; and Korean mandu. These names do not imply that one tooling set makes every shape. Moulds, wrapper method, filling delivery and seal profile are configured and validated for the nominated products.
Flour absorption, mixing energy, rest time and temperature affect sheet smoothness, elastic recovery and sealing.
Fat level, particle distribution, free water and feed temperature influence accurate depositing and seal cleanliness.
Piece spacing, surface moisture, belt loading and freezer residence time determine separation and exit temperature.

ZPJ-II data is machine-level—not whole-line capacity
HELPER’s cross-site product information identifies the ZPJ-II as an automatic frozen-dumpling forming machine with dough sheeting, replaceable moulds, residual-dough recovery, a raised discharge for freezer connection and a large filling hopper. Its published nominal capacity is 6,000–18,000 pieces per hour, but sustainable accepted output depends on dumpling weight, shape, filling behaviour and quality tolerances.

Balance the IQF freezer against accepted forming output
Freezer sizing cannot be inferred from pieces per hour alone. Engineering calculations require entering product temperature, piece mass, water and fat content, target core temperature, ambient conditions, belt loading and sanitation or defrost schedule. Dumplings must reach the belt with controlled surface moisture and adequate spacing; otherwise pieces can bridge, deform or freeze together.
For a raw frozen product, correctly formed dumplings may move directly to inspection and IQF freezing. A cooking or steaming tunnel is used only when the commercial product definition calls for a pre-cooked or partially cooked dumpling. That route also needs a validated cooling step before freezing. The thermal process must therefore be quoted from the recipe and regulatory plan, not copied from a generic line diagram.
Design sanitation and segregation into the factory
Raw meat, vegetables, flour dust and ready-to-freeze product create different hazards. The layout should separate raw-material movement, operators, waste and finished-product traffic while retaining access for cleaning and maintenance. Drainage, floor slopes, refrigeration plant, electrical distribution, compressed air and wash-water points should be approved before equipment foundations and services are fixed.
Cleaning plans must cover filling-contact parts, dough residue, wrapper trim, conveyors, forming moulds and freezer access. Where allergens or multiple fillings are produced, establish a documented changeover sequence, dismantling scope and verification method. Hygienic performance depends on the complete room and operating practice as much as stainless-steel machine construction.

Accept the line on saleable frozen dumplings
A factory acceptance test should use representative dough and filling, agreed moulds and the intended pack. Record accepted pieces per hour—not only mechanical strokes—together with piece-weight variation, filling giveaway, wrapper thickness, seal failures, malformed-product rejects and operating interruptions. Freezer tests should verify belt loading, residence time and product-core temperature. Packaging tests should include target weight, seal integrity, label or code checks and metal-detector challenge standards.
Site acceptance repeats the critical measures with the installed utilities, refrigeration system and production team. Include sanitation duration, product changeover, allergen cleaning where relevant, start-up yield and operator training. This creates an auditable boundary between standard machine data and project performance.

Does turnkey mean every machine on this page is always included?
No. The official project page describes the equipment that can form the project scope. The signed proposal must identify included machines, interfaces, utilities, installation, commissioning, training and exclusions. Raw-frozen and pre-cooked products require different thermal modules.
What is the capacity of the complete line?
HELPER does not publish one fixed capacity for this turnkey project. The ZPJ-II former has a nominal machine-level range of 6,000–18,000 pieces per hour, but whole-line accepted output is determined by recipe, piece weight, number of forming lanes, freezer duty, packaging speed and yield.
Can one line make gyoza, pierogi, pelmeni, momo and mandu?
The project platform can be configured for these product families, but they may need different dough preparation, wrapper methods, filling delivery and moulds. Supply samples and recipes, then validate each required SKU in a product trial before final specification.
Must dumplings be steamed before freezing?
No. Raw frozen dumplings normally proceed from forming and inspection to rapid freezing. A steam or cooking tunnel is required only for a pre-cooked or partially cooked product and must be followed by a controlled cooling and freezing process.
