Catalogue of process differences
White salted noodles and alkaline noodles may share mixers, compound rollers and cutters, but their flour targets, dough behavior, color development and cooked texture are not interchangeable.
Specifications should describe the accepted dough and cooked noodle, not only the ingredient list.

Change one controlled variable at a time. A visually acceptable dough can still fail after cooking, holding or packaging.
Record flour lot, water mineral condition and temperature before comparing salt or alkaline systems.
Dissolve and dose uniformly. Define the permitted concentration and verify the tank, agitation and metering method.
Map dry pockets, agglomerate size, discharge temperature and the effect of vacuum where applicable.
A change in rest or roll schedule can hide or exaggerate a formula effect. Keep both documented during trials.
Measure thickness, color and breakage, then cooking time, loss, firmness and holding behavior.
