Configuration check: a 60 g finished product with a 35–40 g wrapper portion leaves a relatively small filling allowance. Confirm the intended dough-to-filling ratio before final tooling and performance acceptance.
Khinkali combines a relatively heavy product, moist filling and a gathered top closure. A useful factory trial therefore measures more than machine cycles: it checks wrapper damage, pleat definition, top-knot closure, filling giveaway, leakage and stable transfer to the next process.
Specify flour, hydration, resting time, thickness profile and temperature at the former.
Confirm particle size, free liquid, fat temperature and pumpability using the intended recipe.
