How the estimate works

Hydration is calculated as water weight divided by dry flour weight. Total batch weight includes flour, water and other ingredients. Hourly dough load is total batch weight multiplied by batches per hour.

Important limitation

This is a preliminary estimate. Dough type, temperature, gluten strength, recipe, vacuum requirement and cleaning cycle can change the correct machine choice. Final selection requires product data and supplier confirmation.

Worked calculation example

A factory plans one batch with 80 kg dry flour, 48 kg water and no other ingredients. The dough hydration is 60%. Total dough weight is 128 kg per batch. At six batches per hour, the preliminary dough load is 768 kg/h.

This example describes production demand, not a guaranteed mixer output. Mixing time, loading, discharge, cleaning and recipe behavior still need confirmation.

How is dough hydration calculated?

Divide water weight by dry flour weight and multiply by 100. For example, 48 kg water divided by 80 kg flour equals 60% hydration.

Is mixer volume the same as flour capacity?

No. Chamber volume, dry-flour input and total dough weight are different values. The supplier schedule should state which capacity basis applies.

Can this calculator guarantee hourly output?

No. It estimates production demand. Accepted output depends on recipe, cycle time, loading, discharge, cleaning and actual operating conditions.

What should I send for final mixer selection?

Send the recipe, flour weight, hydration, dough temperature, batches per hour, downstream process, voltage and available factory space.
