Follow the material, not just the list of machines
A roller-based route typically mixes ingredients, forms and combines dough sheets, conditions the dough, reduces sheet thickness and cuts strands. Resting and reduction arrangements depend on the selected product and line. Yamato Noodle: commercial noodle production.
- Weigh and dose: identify the flour lot and record the liquid addition.
- Mix: establish a repeatable discharge condition, not merely an elapsed time.
- Form and combine sheets: obtain a continuous sheet suitable for the next stage.
- Condition and reduce: manage the resting interval and successive rolling stages.
- Slit and cut to length: measure actual strand dimensions and portion handling.
- Transfer to the chosen finish: pack fresh, or follow the specified cooking, cooling, freezing or drying route.
Measure the output at each stage
Build a trial record with the mixing program, dough condition, sheet width, measured thickness after each reduction, resting conditions, strand geometry and finished portion weight. A roller-gap display is a machine setting; the noodle measured after rolling is the product result.
Retain a sample and a close photograph after each important stage. If the final strand tears, the record helps locate where a weak sheet or a transfer problem first appeared. Avoid fixing a downstream symptom by changing several upstream settings at once.
The documented M440 line: ten units
The existing M440 Automatic Fresh Noodle Production Line page lists this ten-unit arrangement. Upstream flour handling and mixing are separate from this count.
- Compound dough sheeter
- Large-wave rolling unit
- Medium-wave rolling unit
- Dough resting chamber
- Small-wave rolling unit
- First smooth-roller reduction unit
- Second smooth-roller reduction unit
- Rolling unit with noodle-forming cutter
- Three-tier air-cooling noodle conveyor
- Noodle length cutter
This is a documented configuration, not a universal prescription for every ramen product. Air cooling is a handling step; it does not by itself establish a validated chilling process or shelf life.
Specify the cut and test the bowl
Record thickness and width separately, along with straight or wavy presentation, length and raw portion mass. Agree which dimensions are measured before cooking and which quality checks are made after cooking. Ask for the compatible cutter and forming arrangement; do not assume that every shape can be produced by one standard setup.
Cook repeated portions using the intended basket, water load and service method. Assess the noodle immediately and after the real serving delay. Save the final agreed sample as the reference for equipment acceptance.
Before approving a line layout
Check operator access, cleaning access, belt transfers, resting capacity, utilities, drainage and the connection to packaging. Identify the slowest duty using accepted product output and actual planned downtime. Review individual dough-processing units and the noodle project checklist before requesting a layout.
