Is egg counted entirely as water?
No. The calculator includes only the selected moisture percentage of the egg ingredient.
Does hydration predict dough performance?
Not alone. Flour protein, starch damage, salt, temperature, resting and mixing method are also important.
Should all flour-like ingredients be included in flour weight?
Use a consistent formula convention. If starch or other powders form part of the flour base, include them consistently when comparing batches.
