Set vacuum dough mixing parameters from the product—not the nameplate

Vacuum degree, timing, mixing time, water addition, speed and dough temperature interact. A defensible process window comes from controlled trials with the real flour and downstream route.

The six controls that belong in the trial record

Record actual values and their measurement basis. “Same recipe” is not enough if flour temperature, water temperature, rest time or vacuum timing changed.

Vacuum level

State whether pressure is gauge or absolute. At roughly 101 kPa local atmosphere, −0.08 MPa gauge is about 21 kPa absolute; altitude and weather change that conversion.

Record: local pressure, gauge reading, absolute pressure if available, stability and leak rate.

Vacuum timing

Define when pump-down starts, whether liquid is already distributed, the hold period and when the chamber vents. “Mixed under vacuum” is too vague to reproduce.

Record: start trigger, pump-down seconds, hold, vent and lid-open time.

Water addition

Water temperature, dose accuracy, spray/distribution pattern and addition time can dominate hydration uniformity.

Record: water-to-flour ratio, temperature, delivery time, nozzle state and residual liquid.

Mix time and energy

Under-mixing leaves nonuniform particles; over-mixing can increase temperature or weaken the desired structure. Published minutes are a starting point, not acceptance evidence.

Record: phase times, current/power trend, final crumb condition and temperature.

Speed and paddle

Shaft speed and paddle geometry change circulation, shear and heat generation. Compare settings only on the same machine and batch fill unless the geometry is documented.

Record: paddle/shaft configuration, rpm, direction and load ratio.

Flour and temperature

Protein quantity alone does not predict response; protein quality, damaged starch, particle size, flour age and initial temperature matter.

Record: flour lot/COA, room and ingredient temperatures, final dough temperature.

Build a small process window

Start from the current accepted atmospheric recipe. Use a bounded screening trial and stop settings that create heat, poor discharge, leakage or downstream failure.

Use a stop rule: do not chase a stronger vacuum reading when the product result has plateaued or worsened. The 2012 fresh-noodle study is a useful warning: its strongest tested vacuum was not the best condition for every flour.

Connect mixing to the next operation

The correct endpoint is the dough condition required by rest, sheeting, forming or extrusion—not an isolated mixer reading.

  1. Define discharge condition

    Specify acceptable particle/crumb size, free flour, agglomerates, temperature, bulk density and discharge completeness.

  2. Control the rest

    Keep rest time, humidity protection and transfer method constant; otherwise rest can hide or amplify mixing differences.

  3. Measure the first sheet

    Track pickup, edge cracking, holes, lamination, shrinkback and the force needed to reach the first stable sheet.

  4. Follow through to finished food

    For noodles, test cooking and service behavior. For wrappers, test forming, sealing, freezing/storage and cooking.
