Korea · Knife-cut, sauce and cold noodles

Korean noodle styles

Compare kalguksu, jjajangmyeon and naengmyeon through their noodle base, serving method and texture.

Compare the noodle styles

Kalguksu

This knife-cut noodle soup takes its name from the cutting tool. For a sheeted trial, compare width and sheet thickness with the bite you want in hot broth.

Jjajangmyeon

Wheat noodles are tossed with a thick black bean sauce. Compare how the sauce coats the strands and whether the noodles separate when mixed.

Naengmyeon

Recipes vary by region and may combine buckwheat and starches or emphasize starch. Assess the noodle cold, using the actual broth or dressing you plan to serve.

Test at serving temperature

Hot soup or warm sauce
Check the noodle when first served and after the normal wait in the bowl.
Cold broth or dressing
Record cooling and draining before judging elasticity, separation and texture in the cold bowl.

Production trial

What to record

Record the flour or starch blend and the intended serving temperature. Use the same broth or sauce when comparing test batches.
