Japan · Wheat, buckwheat and alkaline noodles

Japanese noodle styles

Compare udon, soba, somen and ramen by flour, strand shape and how each is traditionally made and served.

Compare the noodle styles

Udon

Salted wheat dough can be rolled and cut. Thick, square-cut Sanuki udon is one regional example. Compare thickness, chew and reheated texture.

Soba

Buckwheat flour defines soba. Some recipes blend it with wheat. Check sheet handling and how easily the cooked strands break.

Somen

Thin wheat noodles are often sold dried. Traditional Miwa somen is hand-stretched in stages and dried. Check how readily the strands separate when cooked.

Ramen

Japanese ramen commonly uses alkaline wheat noodles. Evaluate the strand in the intended broth and through the planned holding time.

Choose the product state

Serve fresh
Trial bite and separation in the final serving format, including a hot broth or a cold dipping dish.
Pack for distribution
Decide whether to ship the noodle fresh, dried or frozen before specifying handling and packaging.

Production trial

What to record

Use the noodle’s flour composition, forming method and storage format to set the trial. Include wheat and buckwheat as separate ingredient fields.
