Separate the folded wonton route from the open-top shumai route, then confirm model capability with real wrapper and filling samples.
Wonton and shumai may use related dough systems, but their forming actions and presentation targets are different. Start with the accepted finished piece, not the machine name.

The route must form the wrapper around the portion while leaving the top open and preserving the skirt or pleat appearance.
If both products are required, confirm tooling, wrapper supply, fill system, cleaning and changeover time. Do not infer interchangeability from a shared product-page label.

America's Test Kitchen turns the same wrapper-and-filling idea into two visibly different geometries. The close views help explain why wrapper support, filling placement and closing action must be specified before a buyer compares forming machines.
A wonton encloses and seals the filling, while shumai keeps an open top and relies on side-wall support. Those different product boundaries lead to different wrapper-feeding, filling-control and closing requirements even when the ingredients appear similar.
