Mandu production

Match the mandu format, filling and cooking route before choosing equipment.

Mandu can be crescent, round or folded and may be steamed, boiled, pan-fried or frozen. Each combination changes wrapper strength, seal geometry, discharge handling and the downstream process.

Lock the product family before line design.

A single project may cover more than one mandu style, but every required format must be included in the tooling and changeover review.

Product variables

  • Shape, pleat or fold pattern and finished dimensions
  • Wrapper thickness and flour/hydration range
  • Vegetable and meat particle distribution
  • Filling weight, temperature and free-liquid control
  • Steamed, boiled, fried, chilled or frozen output

Line risks to test

  • Vegetable moisture changing filling flow during the run
  • Particles interrupting portioning or contaminating the seal
  • Shape deformation during belt, tray or freezer transfer
  • Nominal former speed exceeding thermal or freezing capacity
  • Changeover time between sizes, shapes and recipes

Send the target shapes, recipes, cooking route and saleable hourly output. The proposal will state which equipment is HELPER-manufactured and which is partner supplied.
