Empanada production

Connect dough style and filling to the baked or fried end product.

Empanadas vary widely in dough composition, diameter, edge finish, filling and final cooking method. The same former cannot be assumed to suit every regional product or both bakery and frying routes.

Separate the regional food name from the engineering specification.

Define the product

  • Diameter, finished weight, half-moon profile and edge pattern
  • Wheat, laminated, corn-based or other validated dough system
  • Sheet thickness and temperature at forming
  • Filling particles, viscosity, temperature and portion
  • Baked, fried, frozen or chilled downstream condition

Validate the route

  • Dough release, cut quality and trim handling
  • Seal strength through the intended thermal process
  • Filling exposure, leakage and weight variation
  • Transfer spacing into fryer, oven, freezer or tray
  • Accepted saleable output after normal rejects
