From ingredients to the bowl
- Make the dough
- The local preparation uses wheat flour, water and food-grade alkali. For a sheeted production trial, record the formula by weight and confirm strand dimensions against a cooked sample.
- Prepare the bowl
- Prepare the seasoning separately. Depending on the style, it can include soy sauce, chili oil, Sichuan pepper and aromatics. Toppings are optional.
- Cook and combine
- Cook the fresh noodles in boiling water. Drain and combine with the prepared seasoning. Taste for bite after the noodles have spent the expected service time in the bowl.
Fresh and packaged xiaomian
- Fresh shop-style noodles
- Check handling before cooking and whether the strand keeps its bite after draining and mixing with the dressing.
- Packaged xiaomian
- Chongqing’s licensing guidance describes products containing noodles and separately prepared condiments. Define whether your noodle needs boiling or hot-water reconstitution before selecting downstream equipment.

What to record
Compare two batches using the same seasoning. Record strand width, cooking endpoint and bite after the intended wait. Confirm the target package format before choosing cooling, drying or packing stages.
