Potato-specific noodle route

Potato Starch Noodle Production Line

Use this page when potato starch—not wheat flour and not a generic starch blend—is the declared primary structure-forming material. The route begins with starch specification and gel behavior, then defines strand forming, setting and the required packed state.

Reference process chain

The actual sequence depends on formula and product target. Traditional Japanese harusame provides one documented reference: starch mixing with hot water, extrusion, cooking, cooling, freezing, thawing and drying.

  1. Starch controlMoisture, amylose profile, granulation and supplier consistency.
  2. Premix & gelatinizeWater temperature, pre-gel fraction and mixing energy.
  3. Extrude strandsDie geometry, pressure, temperature and strand stability.
  4. Cook & setComplete the structure without excessive swelling or breakage.
  5. Cool / freezeSet texture and manage strand separation for the chosen method.
  6. Dry or packControl moisture, rehydration, portioning and packaging handoff.

Do not route this project through a conventional wheat-noodle sheeting line by default. Pure-starch paste, gel and extrusion behavior require separate validation.

Specify the finished noodle before machinery

  • Serving useSoup, hot pot, stir-fry, salad or instant cup.
  • Strand targetDiameter, length, transparency, bite and cooked yield.
  • Pack stateDried bundle, wet/chilled, frozen or ready-to-eat.
  • RehydrationTime, temperature, breakage and sauce/soup absorption.
  • Formula boundaryPotato-starch percentage, modifiers and permitted additives.
  • Acceptance testCooking loss, tensile behavior, stickiness and hold time.

Bring the product target before the machine list.

Share the formula, finished sample, accepted output, pack state, utilities and destination market. HELPER can then define the engineering boundary and required trials.
