Prepare the noodle format

Match the forming task to your product.

This 270 unit groups the forming head and conveyor within one machine arrangement. Specify the noodle format, incoming sheet condition and required output before selecting the tooling and operating setup.

Where the selected configuration uses a slitting or forming roller cassette, its geometry determines the relevant forming duty. Confirm the installed tooling and changeover method from the technical specification; the external view does not establish every available noodle shape.

Review the machine as one working unit.

The unit view shows the upright drive and head assembly, upper adjustment mechanisms, horizontal blue belt, operator console, lower electrical cabinet and stainless supporting frame with casters and leveling feet.

Review access to the head, tooling, conveyor and controls on the selected drawing. Detached roller cassettes and neighboring machines visible in the original workshop photo are not part of the illustrated installed configuration.

Upstream: deliver a prepared dough sheet.

A compound sheeting or rolling stage prepares the dough sheet before forming. Confirm incoming width, thickness, continuity and surface condition at the handover.

If the route includes a conveyor with flour dusting, agree the transfer support and flour application with the forming requirement. Coordinate material delivery and operating speed between the units.

Downstream: plan the next handling step.

The formed product continues to the next specified transfer, length-cutting, portion-handling or other process stage. Choose that stage according to the finished product and required condition.

Confirm the discharge position, product support and speed coordination. Forming a noodle format and cutting it to a finished length are separate duties unless both are explicitly included in the selected configuration.

Information needed for selection.

  • Finished noodle format and recipe range
  • Incoming dough sheet width and thickness
  • Required forming or slitting tooling
  • Surface flour and material handling condition
  • Downstream handling and finished-length requirement
  • Layout, utilities, cleaning and service access

270 is the owner-supplied configuration designation. Confirm working width, cutter options, power, speed range and capacity from the approved machine specification.

Evaluate the formed product in a trial.

Use representative dough to inspect feed continuity, release from the forming area and separation of the output. Check for sticking, tearing, unwanted stretching and product accumulation during transfer.

Record the recipe, sheet condition, tooling and settings with the trial observations. Assess the product after the following operation against agreed acceptance criteria.

Common planning questions.

Does one tooling set make every noodle format?

No universal tooling range is specified here. Match the forming or slitting cassette to the required product, and confirm available options and changeover arrangements.

Are the loose roller cassettes included?

The original photo shows separate cassettes on the workshop floor. They are not shown as installed equipment in the unit illustration. Confirm the supplied tooling list and optional accessories in the quotation.

Does forming also determine the finished noodle length?

Confirm length-cutting separately. If a dedicated cutter or portion-handling stage is required, specify its interface and controls with this forming unit.
