Observe first, then isolate hazardous energy

Record the first place the defect appears from a safe viewing position. Capture batch, flour lot, formula, dough temperature, rest time, room condition, entry geometry, roll settings, belt speeds and time since cleaning. Stop and follow the model-specific isolation procedure before inspecting rolls, scrapers, belts, guards or trapped dough. Never reach into a running nip or bypass an interlock.

Use one controlled change at a time. If multiple settings are changed together, the apparent improvement cannot be reproduced and may hide a mechanical fault.

Follow a branch-and-verify diagnostic sequence

  1. Contain the result. Identify affected product, time window and whether production can continue safely without mixing accepted and suspect output.
  2. Locate the first occurrence. Trace upstream from the visible defect until the last confirmed good material state.
  3. Separate fixed from drifting patterns. A defect fixed at one cross-web position suggests a localized interface; a defect that changes with batch or time points toward material or operating conditions.
  4. Verify measuring devices. Check the thickness gauge and approved gap indication before adjusting the process to an unverified number.
  5. Change one factor. Record the old value, new value, reason, sample time and result.
  6. Challenge the correction. Run long enough and include a normal stop/restart before declaring the issue closed.

Do not continue a trial when guarding, interlocks, belts, bearings, scrapers or electrical parts show an unsafe condition. Production pressure does not change the isolation and escalation requirements in the machine manual.

When the sheet tears

Check whether the entry is too thick or irregular for the selected nip, whether the dough has had the specified relaxation, and whether the defect follows a fixed cross-web position. A fixed position suggests a localized roll, scraper or transfer issue; random defects that track dough condition suggest process variation. Reduce severity conservatively or distribute reduction across stages, then confirm downstream thickness rather than accepting a thicker sheet as the cure.

When dough sticks to a roll or belt

Confirm formula and surface moisture, dough temperature, dusting type and dusting quantity. Excess dusting can make release look better while damaging sealing or finished appearance. After safe isolation, inspect cleanliness, scraper condition and approved adjustment. When thickness varies across the web

Measure the incoming dough first. An off-centre or wedge-shaped feed can produce an uneven sheet even when the roll gap is correct. If entry is controlled, check gap parallelism, roll deflection or wear, bearings, belt tracking and material buildup according to the manufacturer’s manual. Verify with a sample grid through a sustained run, including after a normal stop and restart.

Train operators on the observable trigger and escalation point, then review the next comparable runs for recurrence. Preserve failed samples or photographs when they help distinguish this case from a future defect with similar appearance.
